Dark Chocolate Crinkle cookies

I saw a few versions of this recipe last week, and it caught my eye.  
We make a lot of cookies for Christmas in my family, but this is not usually on our list, so I made a batch to try them out.  I used dark cocoa powder, as opposed to the typical cocoa powder.
 Oh man, oh man, they were SO good!  
 Dark chocolate crinkle cookies
{adapted from Williams-Sonoma}
1 2/3 cups all-purpose flour
1/2 cup unsweetened dark cocoa powder
1 1/2 tsp baking powder
1/4 tsp salt
8 Tbsp butter, at room temperature
1 1/4 cup granulated sugar
2 eggs
1/2 tsp vanilla extract
1/2 cup powdered sugar

Preheat oven to 350º. Line baking sheets with parchment paper. 
Measure the powdered sugar into small bowl and set aside.

In medium bowl, mix flour, cocoa powder, baking powder and salt together, and set aside.
In large bowl, beat butter and sugar until creamy, 2-3 minutes.  
Add eggs, one at a time and blend well. Add vanilla and mix in.  
Add flour mixture into butter mixture and beat on low until just incorporated.

To form the cookies, take a tablespoon of dough and roll into ball with your hand.  
Roll dough ball in powdered sugar to coat.
Place balls on cookie sheet, about an inch apart.

Bake for 10-12 minutes. 
Remove from oven and let cookies sit on baking sheet 10-15 minutes.
Transfer to cooling rack.
Enjoy!

  2. Oooh...we make these every year at our house! I LOVE them! I've not tried them with the dark chocolate powder though, I will have to try them that way!
