Peanut Butter Chocolate-Chip Cookies.

I don't know if I have mentioned before, but I have a certain love for peanut butter. 
Like, I adore peanut butter and could eat it at every meal, on something.
Ok, maybe not quite.  But oh well.
Add that to my love for all things chocolate and you've got a dangerous combination.


I found this peanut butter chocolate-chip cookie recipe a few weeks ago.
And HAD to try it, of course.
Oh.man.alive.  They were SO good!  
The perfect combination of crunchy and soft, salty and sweet.  Yum-o.

We picked up a bag of Heath toffee pieces (found by the chocolate chips) at the store the other day.
And I thought it would be good to throw them in this recipe, in place of chocolate-chips.
I was right.  They were amazing.
I can't decide if I like them with chocolate chips or toffee pieces better!
Anyways, if you are into peanut butter and chocolate, you have got to try these delicious cookies!


Peanut Butter Chocolate-Chip Cookies
(recipe found at Baking Bites)
2 1/4 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 c butter (room temp)
1 c sugar
1/2 c brown sugar
3/4 c peanut butter (I used creamy, but if you like more texture, try crunchy!)
1 large egg
1 tsp vanilla extract
2 c chocolate chips or toffee pieces

Preheat oven to 350°F. Line baking sheet with parchment paper (makes for SUPER easy cleanup!).
In a medium bowl, whisk flour, baking soda and salt together. Set aside.
In a large bowl, cream butter and sugars together until light and fluffy - about 3ish minutes.
Blend in peanut butter, egg and vanilla until mixture is smooth.
Gradually blend in flour mixture until dough just comes together.
Stir in chocolate pieces.
Shape dough into 1-inch balls and place on baking sheet. Leave about 2 inches between each.
Bake for 12-14 minutes, until cookies are lightly browned and set around edges.
Cool cookies on baking sheet for 4 minutes, then transfer to wire rack.

Makes about 3 dozen cookies!
