Tea for 3 (Banana Bran muffin recipe)

It was an overcast morning, and I was running out of entertaining activities in the house. I then remembered I had over-ripe bananas that needed to be used up, and found a half-empty box of bran in the cupboard. So we whipped up a batch of banana bran muffins, and had tea. The three of us.
Ok, so the kids sipped apple juice out of their little teacups, and pushed their muffins around on their plates, because really, they were just excited to be having tea in their finest cups.
It was fun. And a great distraction for awhile. Until the tiredness seeped in, and it quickly became apparent that nap time was just around the corner. It was at the end of our teatime, that L grabbed my camera and snapped a few pictures. From her perspective (Um, yeah, hello baby belly....)...

Banana Bran Muffins
*adapted from Fuss Free Cooking
1 cup bran cereal
1/2 cup milk
2 ripe bananas, mashed
1/3 cup olive oil
1 egg
1 cup flour
2.5 tsp baking powder
1/2 tsp ground cinnamon
1/4 cup brown sugar
Preheat oven to 375º. Line muffin pan with papers or grease. In large bowl, mix bran cereal and milk together. Let sit for about 5 minutes, allowing the cereal to soak up the milk. Meanwhile, mash your bananas. Add them to the cereal-milk mixture and mix well. Add oil and egg, beating well to incorporate. Next, add flour, baking powder, cinnamon and sugar. Stir until just combined. Fill muffin cups 3/4 full. Bake 20-25 minutes or until a toothpick comes clean. Enjoy!
We had ours with peanut butter smeared on top, which was delicious!
