Chili Cheese Dip and Artichoke Bread

{I know, I know...shocking that I've posted twice in one day!}

I have two recipes to share today.  I know some friends have been asking if I am going to share any of my more recent low-calorie or healthier recipes, and I will get around to those soon.  But today, the recipes are full of cheese and calories and goodness.  They make great appetizers to take to a party or to share at a get together.  

The first is a tried and true favorite.  My family originally got this recipe over 10 years ago from a friend, and we have made it countless times.  I have wanted to share for some time, but we are always so excited to make it and then it gets eaten so fast, that I can never take pictures, ha!  
You will need: 
1 pkg cream cheese (we used the 1/3 less fat version and it works fine)
garlic powder
1 can diced green chilies
1 can Hormel Chili, Vegetarian with beans
Shredded cheddar cheese, about 1 cup
Preheat your oven to 350º.
Spread cream cheese in bottom of 8x8 pan.
Sprinkle a few teaspoons of garlic powder over cream cheese.
Next, spread green chilies out.
Then, pour can of chili and spread around.
Sprinkle with shredded cheddar (we love sharp!), just covering the top.
Put in the oven for about 25 minutes, or until cheese is bubbling all over.
Take it out and enjoy with chips or crackers.
Super easy and SO good - plus, it's simple to make double batches for a larger group!
 The second recipe was new to me.  Aimee and I found it at Closet Cooking and thought it looked so good, so we made it this week.  It was delicious and I am definitely going to making it again!  It's like artichoke dip (and would be so easy to add spinach!) on bread, so you don't need crackers or chips to dip - genius!
You will need: 
1 loaf of French bread, cut in half with insides scooped out
1 can artichoke hearts
2-3 chopped green onions
1/2 pkg cream cheese
1/4 cup mayo
1/2 cup sour cream
1/2 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese
salt, pepper and garlic powder to taste

Mix all your ingredients (except the bread!) together, saving a little cheese to sprinkle on top.  Spread the mixture onto the sliced and scooped-out bread, sprinkling with remaining cheese.
Bake in 350º oven for 20 minutes, with a tin foil cover.  Remove tin foil and let it bake until top is golden brown - about 10 more minutes.  Take it out, let it cool a few minutes and slice it up!  So good!

  5. Ooh, yum! The chili cheese dip is similar to one that I make, but the extra ingredients that you add would make it much better! I am definitely going to have to try the artichoke bread. I'm not an artichoke fan but this sounded amazing! Thanks for sharing these :)
