Peanut-Butter Chip Snack Cake

My dear friend (thanks, Aimee!!!) got me the Betty Crocker Baking Basics cookbook for Christmas.
I have had so much fun trying out some of the recipes over the last few months.  The latest that I've tried is titled Chocolate Chip Snack Cake and it's GOOD!!!  So, I thought I would share it with you.

It's super easy to make - I don't even dirty a bowl, which makes clean-up really nice!
Plus, it comes together very quickly - less than 10 minutes and it's in the oven.
And I usually have all the ingredients on hand, so it's a quick cake to make.
The first time I made it, I used regular chocolate chips, like the recipe called for.  But then I got it in my head that it would be great with peanut-butter chips.  It definitely was :)

I took a few pictures yesterday afternoon, while we were making the cake.  (The full recipe follows at the bottom...)

First, you put all your dry ingredients into an ungreased 8x8 pan. Easy enough.
 Next, you enlist your little partner-in-crime to help you mix them all together.
 Then you put all your wet ingredients into the pan.
 Make sure to stir it together until well mixed.

 Of course, you must then check to see what the man-child is up to.

Did I mention that Z is standing up on everything?
 Once your batter is all mixed, you sprinkle chips (in whatever flavor you feel like) on top, followed by some granulated sugar.  This makes a nice crispy crust-like top, which is super yummy!
 Pop it in the oven for about 40 minutes. 
Enough time to get the babies down for a nap and do some chores around the house.
Pull it out to see a delicious looking (and smelling!) peanut-butter chip snack cake.
When your husband (or sister, or roomie, or small hungry child) walks in from work, you cut him a piece to go with his afternoon coffee.  And he squeals with delight because you have made him something sweet.  Try to capture photo while he is gobbling it up.
There you have it!  

Peanut-Butter Chip Snack Cake
1 3/4 cup flour
1 cup packed brown sugar
1/4 cup unsweetened baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1 cup water
1/3 cup vegetable oil
1 tsp. white vinegar
1/2 tsp. vanilla
1/3 cup peanut-butter chips (or regular chocolate)
3 tbsp. granulated sugar

Preheat oven to 350º.
In an ungreased 8x8 pan, stir flour, brown sugar, cocoa, baking soda and salt with a fork, until mixed.  Stir in the water, oil, vinegar, and vanilla until well mixed.  Smooth top of batter.  Sprinkle evenly with peanut-butter chips and granulated sugar.  
Bake 35-40 minutes or until toothpick comes out clean.  If serving warm, let stand in pan for 10-15 minutes.  Or if serving cool, let stand 2 or 3 hours.  
Makes 9 servings.

  3. Who cares about the cake, that was adorably funny and it included pictures of your cute clones! Ok, I do care about the cake but I'm just so happy you are blogging and adding pictures!

  4. i love that it's called snack cake... because for some reason i'd feel less guilty eating snack cake than regular cake. : )
